Have your child predict how many grains of rice are in a teaspoon, tablespoon, cup, etc.
You can actually count the number of grains on the teaspoon and children can use this as a reference as to whether there is more or less in the larger items
Peas In A Pod
Provide pea pods to your child
Have your child predict how many peas are in the pod
Have your child count how many peas are in the pod
Add other peas and count totals

Observe different types of rice:
Brown rice
Whole grain rice
Cooked rice
Puffed rice

LANGUAGE ARTS
Rice Bottle
Fill an empty soda bottle with rice
Add letters, beads and small objects
Seal the bottle
Children turn the bottle and shake it to find the letters and objects
You can add a checklist for your child:

After reading "Do Mice Eat Rice", play a rhyming game:

Use picture cues for younger children
Supply the answer in picture form and let them match
Letter Recognition
On a piece of construction paper, have children glue rice over their name or individual letters

In a disposable bowl, soak rice in a solution of Rubbing Alcohol and food coloring (1:1 ratio - alcohol/food coloring)
Dry on paper towels
Let your child create a mosaic using the rice
Rice Shakers
Have your child fill with rice:
Plastic bottles
Paper plates, taped together
Plastic cups, taped together
Decorate
Play their musical instrument by shaking it
